Chocolate Avocado Pudding

I know, it doesn’t sound quite right, mixing avocados with chocolate but really, it’s a delicious combo and certainly a healthier option to the store bought pudding mixes. This recipe has 5 natural ingredients (Avocado, Cocoa, Coconut Milk, Honey & Vanilla) compared to the list of ingredients in the Jell-O brands found here.

Serve it plain, or top it with crushed pistachios (above) or fresh strawberries. Talk about a fake out with the kids. This recipe takes only minutes to prepare and if you don’t let them see you making it, they’ll never know. The avocado creates the perfect texture while the chocolate, coconut milk, vanilla and honey take care of the taste. As for a sweetener, you can’t beat the Wildflower honey out here in the Bay Area!

Growing up in our house, when chocolate pudding was served you could count on an after dinner laugh as Kirsten and Sydney would inevitably fill their mouths with it then smile big and tell us how much they loved us, chocolate teeth and all. Oh, how I miss those days!
