Roasted Beets & Sweet Potatoes

Beets & sweet potatoes

This is one of our go-to sides, snacks and sometimes even dinner. This mix is super easy and incredibly healthy too. We even share with our dogs!

Just rinse and peel a small bunch of beets and cut into cubes then grab 2-3 sweet potatoes and chop up into cubes (we leave the skin on) and toss them all into a bowl, drizzle with good olive oil and sea salt to taste. Line a pan with tin foil and bake in the oven at 400 degrees for approximately 30 minutes. Keep checking as the cook time depends on how small you chop the beets and sweet potatoes.
