Craving a taco but without the shell and the beans led me to this creation. While trying to adhere to a mostly Paleo diet (no beans, no grain, no corn) I made a modified version of a taco salad and quite honestly, inhaled it and was quite satisfied! Not to mention, our homemade taco-seasoning blend was amazing!
While we don’t always adhere to the Paleo diet (eh um, peach pie & chocolate cake) we do try! We read our labels too, which caused me to nix the canned green chilies that I was hoping to add. Somehow adding Calcium Chloride, Dextrose, Malic Acid or Tricalcium Phosphate didn’t sound right so I opted for freshly diced scallions instead.
